Amchoor or mango powder is made from dried mangoes, giving it a fresh sour taste. It is used in North Indian vegetarian dishes and can also be found in spice mixes for Tandoori and barbecued meats. Mango powder provides sour taste when extra moisture is not desired.
Mango powder adds a fruity sourness to vegetable curries, stews, soups, chutneys and stuffings. Also delicious in marinades for chicken, fish, seafood or vegetables. Mango powder is an important ingredient in the Indian chat masala and goes well with beans, cauliflower, chickpeas, eggplant and potatoes.
