Shiro miso (white miso) is a mild, slightly sweet Japanese miso paste that is fermented for only a few weeks. It is usually made from soybeans and rice, with a low salt concentration, making it softer in flavor than other miso varieties.

This miso is made from buckwheat. Buckwheat has a fairly distinct flavor that complements the mildness of shiro miso well.

How do you use shiro miso?

Due to its short maturation, shiro miso is mild and multi-purpose. Its slightly sweeter taste makes the miso the ideal base for soups and sauces. You can also mix the miso under your granola or spreads. Or why not, use it as part of cake frosting.

  • Add 1 teaspoon of miso paste per 200 ml of water or sauce.

  • Adjust the amount to taste.

Shelf life and storage tips

  • Our shiro miso is not pasteurized, so the fermentation process continues and the flavor changes over time.

  • The expiration date is on the package and remains the same regardless of whether the jar has been opened.

  • Keep the miso refrigerated to slow fermentation and preserve the flavor longer.
