To obtain black garlic, garlic bulbs and loose cloves are placed under proper temperature and humidity for weeks. This carefully controlled heating process ferments the garlic. During the fermentation process, the sugars and amino acids combine to form melanoidin, which turns the cloves black and soft.

Rehydrated pieces can be crushed into a garlic paste in a mortar with some olive oil.
