It took us two years to be able to present the very best date syrup. Organic, high quality, exceptionally tasty and lower in sugar than any other syrup. Special in every way.
These dates are from controlled organic cultivation in Algeria, certified to European standards. So without chemical fertilizers, and without the use of pesticides and herbicides. We do not add sugar syrup, preservatives, or any other additives.
The dates we use for this syrup are grown by an authentic Algerian family farm, growers whose knowledge and skills have been retained over many generations. Deglet nour dates are the 'kings of dates' in the Mahgreb countries. Compared to dates from the Middle East, they naturally contain less sugars. That largely determines the taste of this date syrup: deeply savoury, but not nearly as sweet as most industrial syrups.
Algerian oases families make their fresh syrup daily in a special way. Small metal press kettles are refilled every day with dates, which are heated under the sun. Hot, but far below boiling point. Then, they manually press the necessary syrup for the day in the morning.
This is exactly the same principle we apply to the production of our date syrup on a larger scale - uncooked, slowly pressed and bottled as quickly as possible.
The concentration of this date syrup is not based on long and hot cooking, but from the amount of fruits used: to produce 1 bottle of date syrup, we need up to 3 kg of dates.
A "secret" ingredient in the most delicious sauces, date syrup goes particularly well with game and poultry. But it also goes well with other sauces. Use it in yogurt and granola. Date syrup is also an excellent sweetener in cakes and for baking.
Date syrup also goes well with dessert dishes such as ice cream and pancakes.
