Our ceremonial matcha tea is grown exclusively in Kagoshima prefecture in the far west of Japan. A bit comparable to best chateau's in Bordeaux. The tea production there is traditional and naturally organic, i.e. without artificial fertilizers or sprays.
Matcha has exceptional nutritional properties, with a very high concentration of chlorophyll and amino acids, due to the shading of the plantations with special shade cloths during a short period before harvest. The very young tea leaves are dried and ground, therefore you get 100% of the nutrients when drinking mactcha, when infusing tea leaves it is barely 30%.
Japan has a complicated grade system for matcha tea based on the region, texture, flavor, leaf quality, east period, etc.
Ceremonial Matcha tea is scarce. Only well-defined harvesting areas qualify. The tea leaves are from the first harvest, they are very fine and are picked from the end of April to the end of May. They are also - unlike the lower grades - only ground on real millstones. It is the most refined and delicious matcha tea you can find.
To prepare this powder tea according to Japanese tradition, put a bamboo matcha spoon of powder in a bowl. Add boiled water at about 80°C and froth with a matcha whisk.
Use a quarter to half teaspoon per cup (for mild to strong green tea).
