The cereal fonio (botanically Digitaria exilis), is not yet known to the general public, and that is somewhat unjustified. This cereal is widely grown in Africa, especially in the western part of the continent. This crop is easy to grow, from gluten free, nutritious, healthy and tasty besides.
Fonio is somewhat similar to couscous in structure, the taste is similar to quinoa, a bit nutty.
Our fonio is from controlled organic cultivation, so without the use of pesticides, chemical sprays or artificial fertilizers.
The crop thrives amazingly well in poor soil and drought. And as early as 2 months after sowing, it can be harvested. This makes fonio one of the most sustainable food products possible.
Fonio contains essential amino acids, including methionine and cysteine. These are amino acids not found in wheat, rice, corn and other grains. Finally, it also naturally contains calcium, magnesium, manganese and zinc as minerals.
The cooking time of peeled fonio is about 10 minutes. All dishes with couscous and quinoa can be replaced by fonio. In Africa, it is also used to make porridge.
