Butter mushrooms are from the boletus family which are edible mushrooms with a short thick stalk. There are dozens of boletus subspecies, but the best known are the brown butter mushroom (or chestnut bolete) and the funghi porcini. Both of these are known to have even more flavour when dried, and are therefore tastier than fresh.

Mushrooms are an important source of vitamin B2, vitamin B3, folic acid and the minerals potassium and phosphorus. In addition, mushrooms (such as the boletus family) are rich in fiber and copper. For this reason, mushrooms are sometimes referred to as 'super vegetables'.
