Black cardamom is a basic ingredient in Indian cuisine. These whole cardamom pods have a brown to black color and a warm flavor and smoky aroma. Not to be confused with the more familiar green cardamom.
The warm, smoky flavor of black cardamom is wonderful in spicy, hearty stews and curries. It adds warmth and power to your dish.
Green cardamom, on the other hand, is particularly delicious in lighter and fresher dishes. It adds zest and freshness to a dish.
Simmer the whole pods in stews or curries. You can also cut open the pods and use the seeds, ground or otherwise, in your spice mix or curry powder.
