The small white beans are beautifully round and keep their shape well during cooking. You can therefore use them cold or hot in soups, salads or mashed potatoes. They are also very suitable for stews and chilli dishes.
Soak the beans in cold water for 12 hours beforehand. Then cook them for 40 minutes or 15 - 20 minutes in a pressure cooker. These beans have a creamy texture and flavor.
