Removing starch from wheat flour leaves proteins. Those proteins are wheat gluten. This organic flour contains no less than 80% gluten. That's 80g of proteins per 100g of flour! A lot more than the gluten flour you find in the supermarket. What's more, this gluten flour is 100% natural and completely free from additives.
Gluten makes bread fluffy. Add 2-5g of wheat gluten per 100g of bread dough. Depending on the amount, your bread will be fluffier and more elastic. Also use to make your own seitan.
