Horseradish is a spicy powder that is similar in taste to mustard. Horseradish goes well with oriental dishes, but is also used in European cuisine.
Horseradish excels as a sauce for roast beef (roast beef), for the classic French soup pot-au-feu and for smoked fish. The longer horseradish is cooked, the more the flavour and pungency evaporate.
Make a strong horseradish dip by mixing horseradish with an egg or cream-based sauce (e.g. sour cream or mayonnaise). For a shrimp dipping sauce, use one cup of ketchup and 2 tablespoons of horseradish powder.
Always use this ground horseradish at the end of cooking. Horseradish loses its flavour and spirit when cooked.
