Small, local salt farmers extract the spring salt by hand. Thanks to the careful harvesting method, the salt retains its pure crystal structure. After harvesting, the farmers spread the salt on pyramid-shaped wooden platforms and dry it in the sun.
As a result of the manual production process and careful monitoring, only 12 tonnes of Portuguese ore salt are produced each year.
