Oak leaf honey - like pine honey and cedar honey - is a honeydew. The trees have no flowers or blossoms, so there is no source of nectar for the bees to feed on.
The production of this honey is therefore a miracle of nature: made possible by a symbiotic relationship between insects, aphids and honeybees.
Certain species of aphids consume the tree sap: they digest it in such a way that some of the sugar passes their midgut and is expelled as mini drops of sugar water on the oak leaf: that is honeydew.
The Bees collect and process honeydew just like nectar: they turn it into this very special honey.
Oakleaf honey has an exceptionally deep flavor, with distinct notes of wood. With the scents of an autumn forest walk. Cedar leaf honey is dark brown, liquid and not very transparent.
Our oakleaf honey is of mixed EU origin, so from various EU countries with forested areas such as Poland, Germany and others.
This honey is unprocessed, pure, and naturally pure. It contains no additives and is processed naturally without heating. Not pasteurized either.
This honey meets high quality standards and is subjected to extensive analysis. As with all our other honey products, it is carefully controlled.
The bees are not fed sugar during the setting process.
