You take the ratio of 75% millet flour and 25% mashed (sweet) potato.
Mix the mashed potato with the millet flour, 1 egg and a good pinch of salt until you have a supple, firm dough.
Sprinkle your work surface with some extra millet flour.
Divide the dough into smaller portions and roll out each portion into a long snake about 1-2 cm thick
Cut the long snake into about 2 cm pieces
You can lightly press the dough balls with your fork for the distinctive gnocchi shape
Bring a large pan of water to a boil and carefully add the gnocchi. They are cooked when they float to the top, usually after 2 to 4 minutes.
Add in your favorite sauce. Enjoy!
