This citric acid is anhydrous, better known as 'anhydrous citric acid'. Citric acid anhydrous is the anhydrous form (water content ≤ 0.5%) of citric acid monohydrate. Anhydric citric acid is purer than monohydric citric acid.
Water-soluble fruit acid
Citric acid is a water-soluble fruit acid. It is odourless and colourless. The taste is sour and refreshing. The texture of citric acid resembles that of fine granulated sugar.
