Carrageenan is made from seaweed. Originally from Irish moss only, but nowadays different kinds of seaweed are processed. The seaweed is harvested, washed, dried and ground into a powder.
Carrageenan contains a large percentage of cellulose. It is an excellent natural gelling agent, thickener and water binding agent. Our carrageenan is of the Kappa type and 100% natural without additives.
Carrageenan is tasteless. Use it to bind soups, sauces, or salad dressings. In homemade ice cream it prevents crystallisation.
Kappa-carrageenan is soluble in water. After being heated, it will form a gel during cooling. It is less suitable for freezing and defrosting again.
