Steel-cut oats are broken pieces of organic oats. They are unprocessed and not presteamed. Unlike oat flakes, these steel-cut oats are not rolled. This way they preserve a full and crunchy oat taste and texture.
You can make porridge with fine oat flakes as well as with steel-cut oats. The latter have a somewhat fuller taste and crunchier texture. Other than this, the difference is not that big. Steel-cut oats contain slightly less calories and hardly any natural sugars. Hence they have a somewhat lower glycemic index.
Cook for at least 30 minutes in milk or water. Soak overnight in water or milk to shorten the boiling time. Add your favourite ingredients, like fresh fruit, nuts or yoghurt.
