Our Papua New Guinea Sigri coffee beans are 100% whole arabica beans with a smoky, spicy flavor. This unique flavor is complemented by a delicate sweetness and hints of cinnamon and fresh cardamom. In the cup, these coffee beans have a good body and medium bitterness.
These single origin coffee beans grow at an altitude of 1500m on the Sigri plantation, in the western highlands of the province of Papua New Guinea. This coffee plantation was started in the middle of the 20th century. Due to its good location and careful cultivation process, the Sigri plantation quickly built a reputation as one of the best producers of gourmet coffee worldwide.
The coffee berries at the Sigri Estate are harvested by hand and carefully inspected. The berries must be red and fully ripe. Only then do they have the right balance of sugar and acid. The pulp is removed from the bean on the day of harvest.
Then the beans are cleaned using the wet method. The fermentation process takes 3 days. Every 24 hours the beans are washed. Then the beans are left to stand for an additional day, completely submerged in water. This ensures a unique flavor. Finally, the coffee beans are naturally dried in the sun.
At the Sigri plantation, sustainable use of soil and water is a priority. The plantation is bird and environment friendly. The so-called medium density strategy with 2 types of shade trees is used. This not only ensures an even ripening of the coffee berries, but also creates a natural habitat for at least 90 species of birds.
Papua New Guinea Sigri coffee is derived from Jamaican Blue Mountain coffee. At the beginning of the 20th century, people planted seeds from the Jamaica Blue Mountain coffee plant in the soil of Papua New Guinea. Because of this, true coffee connoisseurs sometimes compare the taste of Papua New Guinea Sigri coffee with that of better Jamaican Blue Mountain coffees.
Medium roasting gives the coffee beans a balanced flavor and beautiful mid-brown color. Medium roasted coffee beans have an ideal flavor balance: not too sour but not bitter either.
