Tellichery peppercorns are large, sundried pepper berries from Tellichery, South India. As they have ripened longer than regular black pepper, they have a more aromatic character and are less sharp. The taste is spicy and woody. The humid weather and outstanding soil at the Malabar coast give this pepper its excellent quality. Whole peppercorns retain their flavour longer than ground pepper. Use whole or grind with a mortar or peppermill before use. Delicious on roast beef, sardines, steamed salmon, etc.
